My family loves zucchini bread! We would eat it every day if we could. My mother-in-law has a great recipe and I have used it the past two years.
Now I know some of you might not like the idea of vegetables in bread. It might seem weird but trust me it's good! You can't even taste the zucchini in the bread. Give it a try!
To begin with you will need a zucchini. Peel the zucchini and then cut it in half.
Next you will need to get rid of the insides of the zucchini. Take a spoon and carve in the sides and it will pop out. Then you can use the spoon to scrape out the insides really good before using it. I wouldn't try using a knife it's so much easier with a spoon and you won't cut yourself if you slip!
This is what your zucchini will look like when you're done scraping it out and it's peeled. You may not need this much zucchini. I usually make multiple loaves at once so that I can freeze them for future use.
Next you will need to grate the zucchini. You only need 2 cups for the recipe but if you have left over you can keep it in a bowl for a couple of days until you use it again. I would dab it with a paper towel before use because it will have condensation on it.
You can use a grater like the first picture and just use the big holes and it will be fine.
Or you can use a food processor like this one and all the work is done for you! This was a great Christmas present and I've been waiting to use it just for this. :)
If you are using a food processor make sure to cut it up into smaller pieces to fit. If you are using a hand grater it's easier to leave it in bigger chunks to grate.
Another key to the food processor is to check the inside because a lot of zucchini may be stuck in there and just needs a shake to fall out. Please don't put your hand in the cone while the processor is on! The blades are sharp!
The zucchini will look like this when you are done. All grated and ready to go.
Here's the rest of the cast! You will need: flour, sugar, eggs, salt, baking soda, baking powder, vanilla, cinnamon, vegetable oil, and the grated zucchini.
In your mixer beat 3 eggs and then gradually add in 2 cups of sugar. It should be looking creamy and thick when you are done. Then add in 1 cup of vegetable oil.
Once the eggs, sugar, and oil are mixed you will start with your dry ingredients. I like to take a bowl and mix the dry together. You will need 2-3/4 cups of flour, 1/4 teaspoon of baking powder, 1-1/2 teaspoon cinnamon, 2 teaspoons of baking soda, and 1 teaspoon of salt. Then you need to alternate mixing the dry ingredients and 2 cups of zucchini into the wet mixture. When it's pretty much incorporated add 1 tablespoon of vanilla at the end. It should look like this.
Turn your oven to 350-degrees to preheat. Take two loaf pans and grease them with Crisco. Make sure to get the sides and all of the corners really well. This will make a difference in the final product and getting it out of the pan! Then take flour and put it in the bottom of the pan and shake it around until it's covering the entire pan.
Pour your mixture evenly into both pans.
Bake at 350-degrees for one hour. Make sure to stick a knife in to check if it's done. It's done if the knife comes out clean. I usually check mine around 50 minutes so they don't burn. We like them golden brown.
Once they are finished let them cool in their pans for about 15 minutes. Then take a knife and go around the outer edge to loosen them. Flip them onto a cooling rack to cool down.
I would give them a good hour to cool. If you are making them to freeze make sure they are room temperature before putting them into the freezer.
To freeze I wrap the loaf in two layers of plastic wrap.
Then I put it in a freezer bag with the date on it. This bread will last in the freezer for a year. Ours usually won't make it that long because it gets ate!

2-3/4 cups flour, 1/4 teaspoon baking powder, 1-1/2 teaspoons cinnamon, 2 cups zucchini (grated), 1 tablespoon vanilla, 3 eggs, 2 cups sugar, 1 cup vegetable oil, 2 teaspoons baking soda, 1 teaspoon salt
Beat the eggs and gradually add sugar mixing well. Then add the oil mixing well. Then alternate mixing the dry ingredients and the zucchini. Stir in the vanilla, Pour the mixture into a greased and floured loaf pan. Should make two loaves. Bake at 350-degrees for 1 hour. Leave in the pan to cool then cut and serve.
