Meatloaf Muffins-Fabulous!!
A friend from high school and fellow blogger Chelse put up a fabulous recipe for Meatloaf Muffins several months ago and today while I was trying to decide what to make for supper thoughts of this recipe kept coming to my mind. So I tried it and it turned out FABULOUS!! I even incorporated my best helper and he gave me a hand with the mixing. He was a pretty good helper except every time I tried to take his picture while he was mixing the meatloaf he would try to eat it. Not so good!! So I only got one shot of him helping but it's a good one.
These meatloaf muffines were a huge hit and Wyatt even ate 1 1/2 of them for supper! I would highly recommend this recipe to anyone. I made it with the onions and peppers and it was great spice for the meat, I also bought a 12oz. can of tomato juice and 1 cup didn't use the whole can so I just used it all. The meat was super moist as was the stuffing. I can't wait to try different variations of this recipe and looking for new ones.
