Ingredients: 1 package of oven ready lasagna noodles ( I get name brand and not generic, it makes a difference!), 1 pound of hamburger or sausage, 1 jar of your favorite spaghetti sauce, 2 cans of Italian diced tomatoes, 1 small container of ricotta cheese, 1 small container of cottage cheese, shredded cheese.
Directions: Brown you hamburger and add it to the two cans of Italian diced tomatoes and spaghetti sauce. While that's boiling away mix together your ricotta and cottage cheese together and warm your oven to 350-degrees. Once everything is ready get your pan ready (13x9) and put a nice layer of red sauce on the bottom. Take your noodles and slather on your cheese mixture and lay into your pan. Once your first layer is done take more red sauce and put on top of the noodles and put a little shredded cheese on top. Take your noodles again and repeat the steps from above. I can only get two layers in my pans without overflowing. After this second layer add the rest of your red sauce on top. It should look like the picture below!
Bake in the oven for 40 minutes at 350-degrees. It will bubble and get delicious looking. Oh and if you don't have one I would highly recommend getting the Rachel Ray lasagna pan, it's fantastic and cute!
After it has baked for 40 minutes pull it out and put shredded cheese on top and then pop it back into the oven for 5 more minutes to melt the cheese. See picture below!
Let it cool for about 10 minutes and then serve! It is delicious and you can even substitute low-fat/fat-free cheese and it will taste just as good!
